A deliciously good bread that comes together in less than 10 minutes and requires no rising time. It bakes in less than an hour. This bread is moist, flavorful, and perfect for when you need a quick and delicious bread.
INGREDIENTS
- 4 cups – all-purpose flour
- 1 teaspoon – baking soda
- 1 1/2 teaspoon – salt
- 4 tablespoons – sugar, optional
- 1/4 to 1/2 cup – mixed dried fruits, optional
- 4 tablespoons – butter
- 1 – large egg
- 1 1/3 cups – buttermilk
PROCEDURE
Step 1
Preheat your oven to 375 degrees F. Pour the flour into a sizeable bowl.
Step 2
Add the baking soda and salt.
Step 3
Add the sugar and whisk to combine.
Step 4
Add the dried fruits and coat with flour. You can use anywhere between 1/4 cup of mixed fruits to 1 cup.
Step 5
Add the butter. Using the tips of your fingers, rub the butter into the flour.
Step 6
Whisk one large egg and pour it in.
Step 7
Add the buttermilk. If you can’t get buttermilk, you can make sour milk.
Mix 1 cup evaporated milk with 1 cup water OR mix 1/3 cup powdered milk with 1 cup of water or a cup of fresh milk. Take out 2 tablespoons of milk and replace with 2 tablespoons of vinegar or lemon/lime juice, mix to combine, and allow to stand for 5 to 10 minutes or until it thickens.
Step 8
Knead gently for a few minutes. Don’t over-knead.
Step 9
Shape the dough into a ball

Transfer dough into a buttered pan or tray, use a sharp knife to cut open an X at the top of the dough to allow it to cook through.
Step 11
Bake in the preheated oven for 45 to 55 minutes or until done.
Step 12
Remove from oven and cool on a wire rack.
Step 13
Slice and enjoy!
