This banana nut bread is moist, tasty, and packed full of nutty goodness. It’s easy to make and an excellent and delicious way to use up overripe bananas.
INGREDIENTS
- All-purpose flour – 1 & 3/4 cups
- Baking powder – 1 teaspoon
- Baking soda – 1/2 teaspoon
- Salt – 1/4 teaspoon
- Cinnamon powder – 1/2 teaspoon
- Nutmeg – 1/2 teaspoon
- Ripe bananas – 4 large
- Sugar – 1/2 cup + 2 tablespoons
- Vegetable oil – 1/4 cup
- Melted butter – 1/4 cup
- Eggs – 2
- Vanilla – 1 teaspoon
- Peanut – 1/4 cup
- Almonds – 1/4 cup
- Cashew – 1/4 cup
PROCEDURE
Step 1
Grease a loaf pan with butter and line the bottom with baking paper.
Step 2
Measure out the flour into a mixing bowl. Add the baking powder, baking soda and salt.
Step 3
Add the cinnamon powder and grate in about 1/2 teaspoon of nutmeg.
Step 4
Whisk to combine and set it aside.
Step 5
Add the peanut, almonds and cashew into mortar.
Step 6
Pound gently. You only need to crush, it doesn’t have to be smooth. Set aside.
Step 7
Mash 4 ripe or over ripe bananas with a fork. It doesn’t have to be smooth.
Step 8
Add the sugar, vegetable oil (Use oil of choice) and melted butter.
Step 9
Whisk in two eggs and mix to combine.
Step 10
Add the banana mixture into the flour and mix to combine.
Step 11
Fold in the nuts and mix to combine.
Step 12
Transfer the batter into the greased loaf pan.
Step 13
Top with extra nuts.
Bake in the preheated 350 degrees oven for 45 to 50 minutes or until a toothpick inserted comes out clean.
Step 14
Remove the bread from the oven and allow to cool in the pan for 10 minutes.
Step 15
Remove from the pan and cool completely.
