This Peri-Peri chicken recipe also referred to as Piri-Piri Chicken is so delicious, the chicken is succulent, finger-licking good, and has a lovely tangy taste. You can use any chicken part you like, bake it in the oven or on an outdoor grill.
INGREDIENTS
- Onion – 2
- Chilli peppers – 6 to 12
- Garlic – 8 to 10 cloves
- Lime or Lemon – 1
- Salt – to taste
- Oregano – 1 & 1/2 tablespoons
- Black peppercorn – 1/2 tablespoon
- Olive oil – 1 cup
- Vinegar – 2 tablespoons
- Chicken – 1 to 2 kilos
PROCEDURE
Step 1
Cut the onion into chunks and transfer it into a blender.
Step 2
Chop the pepper and transfer it into a blender.
The amount of pepper you use depends on your heat tolerance. You can use any chilli pepper that you can find or is local to you.
Step 3
Add the juice of 1 lime or lemon.
Step 4
Add the garlic, some salt to taste, black pepper, and oregano.
Step 5
Add the olive oil and vinegar.
Step 6
Cover and blend.
Step 7
Add some of the sauce to the seasoned chicken. I only seasoned with salt.
Rub the sauce all over the chicken.
Step 8
Cover and marinate in the fridge for 2 hours or overnight.
Step 9
Pour the rest of the sauce into a pot.
Cook on medium heat while stirring from time to time, until oil floats to the top.
Step 10
Turn off the heat and transfer the peri-peri sauce to a bowl or jar until needed.
This recipe makes quite a lot of sauce. You could half the ingredients if you don’t need that much sauce. I like to make extra.
Step 11
Transfer the chicken to a baking pan and spoon some of the sauce on it.
Bake in a preheated 400 degrees F oven for 30 minutes.
Step 12
Remove from the oven, turn the chicken over and baste with the peri-peri sauce.
Return the chicken back to the oven and bake for another 10 to 15 minutes.
Step 13
Take out the chicken from the oven, allow it to rest in the pan for 5 minutes before serving.
Step 14
Enjoy with a side of choice.
