Oven Baked Fish

Moist and tender on the inside, crispy on the outside. This fish is full of flavour and you can use any kind of fish you like. The cooking time will vary depending on the type and size of the fish. I suggest you start checking after 20 minutes in the oven.

INGREDIENTS

  • Choice of fish – 2 pieces
  • Salt – to taste
  • Vegetable oil – 3-4 tablespoons
  • Onion – medium size
  • Garlic – 5 cloves
  • Red pepper – 3 pieces
  • Fish seasoning – 1 teaspoon
  • Thyme – 1 teaspoon
  • Salt – to taste
  • Green pepper – 1/3 cup, chopped
  • Red bell pepper – 3
  • Hot pepper – as much as you can handle

PROCEDURE

Rub or spray some oil on your pan. Clean the fish and pat dry.

Season with salt and marinate for 30 minutes.

Heat up the oil over medium heat.

Add the onions and fry until translucent.

Add the minced garlic and fry for about 1 minute.

Roughly blend the red bell peppers and hot pepper, pour into the fried onions and cook for 10 minutes.

Add the thyme, fish seasoning, and some salt to taste. Cook for about 4 minutes.

Add the chopped green pepper and cook for one minute

Take it off the heat and allow to cool a bit.

Pour 2/3 of the pepper sauce over and inside the fishes.

Bake in a preheated 400 degrees oven for 30 minutes.

Remove from the oven and spoon or brush the remaining sauce over the fishes.

Serve with chips or your favourite side.
