I love Plantains, and I love experimenting with different delightful ways to enjoy them. The outcome of this is wonderfully satisfying! I had it with some pepper sauce with my family. You can fry it, bake it as hand pies, or in a pie dish.
INGREDIENTS
DOUGH
- Plantain – 3 fingers
- Butter – 2 to 3 tablespoons
- Salt – to taste
- Baking powder – 1 teaspoon
- All-purpose flour – 1/2 cup to 1 1/2 cups
FILLING
- Cooking oil – 1 to 1 1/2 tablespoons
- Onion – 1/2 cup
- Green onion – 2 to 4 tablespoons
- Pepper – to taste
- Thyme – 1 teaspoon
- Salt to taste
- Beans – 1 cup, cooked
Step 1
Rinse the plantain and cut into half
Step 2
Transfer into a pot, cover with water and cook until soft. About 15 to 20 minutes.
Step 3
Meanwhile, heat up the cooking oil and add the onions.
Step 4
Add the pepper, green onion, thyme and salt to taste. Fry for a few minutes.
Step 5
Add the beans and cook gently on low heat for about 3 minutes.
Step 6
Turn the heat off and allow it cool completely.
Step 7
Peel the plantains

Mash and cool completely

Add the butter and mix to combine. You could mix in one egg if you wish.
Step 10
Add some salt to taste, baking powder, and flour. Add the flour a little at a time until the dough is pliable. You can also add milk, onion powder, garlic powder, etc to the dough, adjust this to suit your taste, don’t limit yourself!
Step 11
Shape into balls and let it rest for 10 minutes.
Step 12
Gently roll out and add a tablespoonful of the filling.

Lift it up gently and fold over.

Trim and press the edges tight.

You can go ahead and fry or

Brush with an egg wash (optional), and prick the tops with a for. Bake in a preheated 350 degrees oven for 30 to 35 minutes.

You can bake half and fry the other. I’m leaning towards the fried version.
