This is basically beans and plantain cooked together. It’s hearty, tasty, nutritious, and has a sweetness from the ripe plantains. What’s not to love about it? Yum!
INGREDIENTS
- 2 cups brown beans
- 3 – 4 ripe plantains, peeled and cut into chunks
- 2 medium onions, chopped
- 2 cooking spoons palm oil
- 1 cup reduced pepper mix
- Seasoning cube to taste
- Salt to taste
PROCEDURE
Step 1
Pick and rinse the beans, pour into a pot of boiling water over medium-high heat, cover and allow to come to a rolling boil, drain the beans, add half of the chopped onions, and just enough water to cook. Put the lid on and allow it to cook.
Step 2
When the beans is soft, add the plantains and some salt to taste, cover and allow to cook until plantains are tender.
Step 3
Meanwhile in another pot/pan, heat up the palm oil. When hot add the other half of the chopped onions and fry for about 2 minutes, stirring from time to time.
Step 4
Now add the pepper mix, seasoning cubes and salt to taste. Fry for about 10 minutes. If you fancy some blended crayfish and/or smoked fish, now is the time to add it.
Step 5
Empty the content into the beans, give it a good mix and simmer on low heat for 10 to 15 minutes.
Step 6
Take off heat and let it rest for 5 minutes before serving.
