Delicious beef stew that is tender, juicy, and packed full of amazing flavours, and so finger-licking good!
INGREDIENTS
- Beef – 1 kg
- Salt – to taste
- Black pepper – to taste
- Cooking oil – 4 tablespoons
- Onion – 1 big, sliced
- Ginger – 1 tablespoon
- Garlic – 1 tablespoon
- Thyme – 1 teaspoon
- Cinnamon – 1/2 teaspoon
- Bayleaves – 2
- Pepper & tomato paste – 3 heaping tablespoons
- Water – 4 cups or more
- Irish potatoes – 8 medium, halved
- Carrots – 3 big
- Sweet peppers – 3 medium, optional
PROCEDURE
Step 1
Pat the beef dry with paper towels and season with salt.
Step 2
Add some black pepper to taste.
Step 3
Mix to combine and set aside.
Step 4
Heat up the oil on medium heat.
Step 5
Brown the beef in batches. Do not over crowd the pan.
Step 6
Flip and continue browning. About 5 minutes.
Step 7
Take out the beef from the pot. Repeat with the rest of the meat and set aside.
Step 8
Add the onion to the pot and fry until it softens.
Step 9
Add the ginger, garlic and bayleaf and fry for about a minute.
Step 10
Add the pepper and tomato paste. Fry for 1 minute.
Step 11
Add some salt to taste, beef seasoning, cinnamon, and thyme. Cook for another minute.
Step 12
Add the browned beef along with its juice and mix to combine.
Step 13
Add 4 cups of water, cover and cook on low heat for 40 minutes. You can use more or less water depending on how thick you want it.
Step 14
Now, add the potatoes and carrots
Step 15
Mix to combine and cook until the potatoes are soft.
Step 16
Add the sweet peppers and cook for 1 minute.
Step 17
Serve hot.
