These classic carrot cupcakes are rich, incredibly moist, flavourful and a total crowd-pleaser.
You can also make it into a loaf.

INGREDIENTS
- 1 1/2 cups all-purpose flour
- 3/4 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon grated nutmeg
- 1/4 teaspoon allspice
- 1/2 teaspoon salt
- 1 1/2 packed cups grated carrots
- 1/2 cup vegetable or canola oil
- 2 eggs
PROCEDURE
Step 1
Preheat your oven to 350 degrees F and line cupcake pan with liners set aside.
Step 2
Measure out the ingredients.
Step 3
Whisk together the dry ingredients.
Step 4
Whisk together the wet ingredients, add to the dry and mix to combine.
Step 5
Now add the grated carrots.
Step 6
Fold to combine.
Step 7
Divide batter evenly among cupcake liners and bake in the preheated oven for about 18 to 20 minutes or until a skewer inserted comes out clean.
Step 8
Cool in the pan on a wire rack for about 5 minutes then remove from pan to cool further. Enjoy warm or cold.
