Fried Potato Balls

How do you enjoy eating potatoes? This is one of the delicious ways I enjoy my potatoes. It’s simple, quick, and tastes amazingly good!

This is a great way you can use up leftover potatoes. You can make it plain or add veggies, cheese, fish, minced meat, etc.

INGREDIENTS

  • Irish potatoes – 10 small pieces
  • Salt – to taste
  • Hot pepper – to taste
  • Chopped onion – 2 – 3 tablespoons
  • Chopped green pepper – 2 – 3 tablespoons
  • Corn flakes – 2 – 3 cups
  • Eggs – 2
  • Oil for frying

PROCEDURE

Peel and rinse the potatoes and transfer into a pot. Cover with water, add some salt to taste and cook until softened.

The potatoes should just be soft and not mushy.

Drain, transfer into a bowl and mash with a fork. It doesn’t have to be completely smooth. Allow it cool a bit.

Add the chopped peppers and onion and mix to combine. Set aside to cool completely.

Scoop about a tablespoon of mashed potatoes into your palm, and shape into a ball. Repeat the process till the mash potatoes are used up then freeze on a single layer for 45 minutes.

Crush the cornflakes, and transfer to a bowl. Break two eggs into another bowl, season with salt and whisk to combine.

Meanwhile, heat up some oil for deep frying.

Dip the potato balls in the whisked egg, then transfer into the corn flakes to coat well, then gently drop into the hot oil.

Repeat the process.

Fry until golden. Remove from the oil and transfer to a paper-lined bowl/plate to soak up excess oil.
