INGREDIENTS

  • 2 cups brown or white beans
  • 2 – 3 pieces scotch bonnet pepper, atarodo
  • 1 medium onion, chopped
  • Salt to taste
  • Oil for deep frying

PROCEDURE

Step 1

Peel your beans and soak for 30 minutes to 2 hours to soften, if you have a powerful blender, blend immediately/

Step 2

Transfer into a blender with very little water and puree to a thick paste then transfer into a bowl.

Whisk the bean batter to incorporate air into it, till doubled or almost double in size. About 4 to 6 minutes.

Step 4

Heat up oil in a bottomed pot or pan over medium-high heat.

Scoop some batter into a small bowl (Just enough you can fry at once, as adding salt to all the batter makes it a bit watery and the balls won’t be as fluffy) add some chopped onion and atarodo, season with salt and give it a good mix.

Step 5

Scoop tablespoonfuls of batter into the hot oil and fry until bottom is golden, flip and fry till balls are golden all over.

Using a slotted spoon, take akara out and transfer onto a kitchen paper-lined plate and repeat process till batter is used up.
