Delicious deep-fried goodness that is crunchy on the outside and tender on the inside…and you only need basic ingredients.
INGREDIENTS
- 1 cup – white or yellow cornmeal
- 3/4 cup – all-purpose flour
- 1 to 2 tablespoons – sugar, Optional
- 1 1/2 teaspoon – baking powder
- 1/4 teaspoon – baking soda
- 1/2 teaspoon – salt
- 1 – egg
- 1/2 cup – buttermilk
- 1/2 cup – sweet corn
- 1/3 cup – finely chopped red onion
- 1/3 cup – finely chopped spring/green onion
- Pepper – to taste
- Oil – for deep frying
PROCEDURE
Step 1
Pour the cornflour into a bowl.
Step 2
Add the all-purpose flour, sugar, baking powder, baking soda, and salt.
Step 3
Mix to combine.
Step 4
In another bowl, whisk together the egg and buttermilk.
Step 5
Pour the wet mixture into the dry.
Step 6
Mix to combine. You want a stiff though at this point. Do not be tempted to add more buttermilk.
Step 7
Now, add the corn.
Step 8
Followed by the onion, pepper, and spring/green onion, mix just until it’s combined.
Step 9
Set aside and heat up some oil for deep frying.
Step 10
Using a teaspoon, tablespoon, or an ice cream scoop – depending on how big you want them, gently drop spoonfuls into the oil, and fry until golden
Note: Do not overcrowd the pot/pan.
Step 11
Transfer to a paper-lined tray/bowl to remove excess oil.
