- Vegetable oil – 1 tablespoon

PROCEDURE
Clean the fish and transfer into a pot on medium heat (You can use any kind of fish you like). Add a half teaspoon of turmeric, fish seasoning, chopped onion, salt to taste and some water. Cover and steam for about 15 minutes.
Measure out the flour into a sizeable bowl, add the salt and turmeric and mix to combine.
Rub in the butter using the tips of your fingers until the mixture resembles large bread crumbs.
Add the egg and mix to combine.
Now add the water and gently knead the dough until it comes together. About 1 to 2 minutes.
Cover the dough and set aside for 45 minutes. You can do this a day ahead and keep in the fridge.
Now, back to the fish. Take it off the heat, carefully remove the bones, flake it, then set aside.
Add one tablespoon of vegetable oil or oil of choice to a pan on medium heat. Add some chopped onions and fry until softened.
Add the minced garlic and stir-fry for some seconds.
Add the chopped peppers, add some salt to taste and fry for about 2 to 3 minutes.
Take it off the heat and empty the content into the flaked fish. Mix it to combine then set aside to cool.
Mix in 2 to 3 tablespoons of mayonnaise into the fish then set aside.
Lightly flour your work surface. Divide the dough into 6 to 8 pieces and shape them into balls.
Roll out a ball of dough into about 1/4 inch thickness. Add about 1/2 tablespoon of the filling into the middle, fold the other end over it and use a fork to press the edges tightly. Or you can use a pie shaper as I did.
Repeat the process.
Arrange the pies into a parchment lined or lightly greased tray.
Bake in a preheated 350 degrees F oven for 20 minutes.
Remove from the oven and serve hot or cold.
