Moin Moin is a steamed bean pudding made with peeled pureed beans, peppers, oil, onions, and some spices. It’s tasty, pairs well with other dishes, and is a favourite of mine.
INGREDIENTS
- 3 cups brown or white beans, peeled and soaked
- 4 – 6 eggs, use more or less
- 1 cup vegetable or canola oil
- 1 smoked fish
- 2 medium onions
- 6 big tatashe (red bell pepper)
- 4 atarodo (habanero peppers) use more or less
- 1/2 cup blended crayfish, optional
- Salt to taste
- Stock cubes to taste
- Banana leaves for wrapping
PROCEDURE
Step 1
Get your ingredients ready. Peel the beans. Boil and peel the eggs. Debone and flake the fish.
Step 2
Rinse the banana leaves well and cut the stems. Arrange the stems in the bottom of the pot. Set aside.
Step 3
Blend the beans with the peppers, onions and crayfish. Transfer into a sizeable bowl, add some warm water, oil and some seasoning cubes and salt to taste.
Step 4
Mix well to combine add some water if too thick otherwise you’ll end up with thick and dense moin moin.
Step 5
Put the pot containing the stems over medium heat and add a little bit of water. Fold one or two banana leaves into a conical shape, add some bean mixture filling 3/4 way full, add some fish and slices of egg and wrap securely to avoid leakage.
Step 6
Repeat process until beans mixture has been used up.
Step 7
Cover with one or two leaves then put on the lid.
Step 8
And cook for 40 minutes.
Step 9
Unwrap one moin moin to check for doneness, If ready serve or let it cook for a further 5 to 8 minutes. Enjoy!
