Nigerian buns is a street snack similar to Puff Puff but richer and with less oil. It has a somewhat crunchy exterior, chewy and delicious on the inside. These are quite easy to make and require no rising time.

INGREDIENTS
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 3 – 4 tablespoons sugar
- 1/4 cup powdered milk
- 1/2 teaspoon grated nutmeg
- 1/4 teaspoon salt
- 1/2 cup warm water
- 2 eggs
- 2 tablespoons oil or melted butter
- Oil for deep frying
PROCEDURE
Step 1
Measure out your ingredients.
Step 2
Whisk together the dry ingredients.
Step 3
Whisk together the wet ingredients and pour into the dry.
Step 4
Mix to combine. Batter should be a little thick and stretchy. Cover and allow to rest for about 10 minutes.
Step 5
Heat up oil in a bottomed pot/pan. when hot drop batter into the oil with an oiled rounded tablespoon or scoop with your hand. (Oil shouldn’t be too hot or the buns won’t cook through).
Step 6
Fry until bottom is golden brown, turn buns over and fry till it’s golden all over.
Step 7
Take buns out as they brown as all might not brown at the same time.
Step 8
Transfer into a paper lined bowl/colander/tray to soak up excess oil.
