Red velvet banana bread is a quick bread with a cake-like texture. It’s moist, delicious, and perfect for breakfast, dessert, or as a snack.
INGREDIENTS
- 2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 3/4 cup melted butter or oil
- 1 1/4 cups mashed bananas
- 2 large eggs
- 1/4 cup buttermilk
- 1 tablespoon liquid red food colour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon grated nutmeg
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon salt
- 3/4 cups sugar
- 1 teaspoon vanilla extract
PROCEDURE
Step 1
Preheat your oven to 350 degrees F. Grease a loaf pan with butter. Set aside.
Step 2
Add all the dry ingredients into a big bowl, In another bowl mash the bananas with a fork (it doesn’t have to be smooth). Crack the eggs into a bowl, melt the butter, add the red food colour to the buttermilk and mix to combine.
Step 3
Mix together the dry ingredients, mix together the wet ingredients plus the vanilla extract and pour the wet into dry.
Step 4
Mix just until moistened. Do not over mix.
Step 5
Pour batter into the loaf pan and bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted comes out clean.
Step 6
Remove from oven and place on a wire rack to cool for about 10 minutes.
Step 7
Take bread out of the pan and cool completely.
