Samoan Coconut Rolls – Pani Popo

These Samoan Coconut Bread rolls are sweet, soft, and finger-licking delicious! I really can’t put into words how good it is, you need to find out yourself.

INGREDIENTS

DOUGH

  • 3 cups all-purpose flour plus more for kneading
  • 1/4 cup sugar
  • 1/4 cup melted butter or oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon coconut flavour
  • 2 1/4 teaspoon yeast
  • 1 large egg
  • 1/4 cup warm water
  • 3/4 cup coconut milk

COCONUT SAUCE

  • 1 cup coconut milk
  • 1/4 sugar
  • 1/4 teaspoon salt
  • 1 tablespoon cornflour

PROCEDURE

Step 1

Pour the warm water into a small bowl, sprinkle in the yeast and 1 teaspoon of sugar, give it a quick mix and leave until frothy.

Step 2

10 minutes later.

Step 3

Add the egg, melted butter or oil, sugar, coconut flavour and coconut milk.

Step 4

Add the flour and salt

Step 5

Knead until dough is smooth.

Step 6

Oil the inside of your bowl and place the dough inside, cover the bowl with plastic wrap and/or kitchen towel, and place in a warm spot until doubled in size.

Step 7

About 90 minutes later.

Step 8

Grease a baking pan or baking tray with high sides with butter. Punch dough down and divide it into 10 to 12 parts.

Step 9

Take each piece and shape it into balls.

Step 10

Arrange dough balls in a buttered baking pan seam side down.

Step 11

Cover with plastic wrap or kitchen napkin and allow to double in size. About 1 hour. While the dough is rising, let’s make some coconut sauce.

Step 12

Add the sugar, coconut milk, salt and cornflour into a pot on medium heat.

Step 13

Stir just until sugar is dissolved and turn off the heat.

Step 14

1 hour later… 10 minutes before the end of the second rise, preheat your oven to 350 degrees F

Step 15

Pour the warm coconut sauce over the rolls

Step 16

Bake in the preheated oven for about 25 to 30 minutes.
