These delicious cookies are made from your everyday oats. It has a crisp-tender texture, stores pretty well, and it’s very easy to make.
INGREDIENTS
- Oats – 2 cups
- Sugar – 1/4 cup to 1/3 cup
- Salted butter – 1/2 cup
- Egg – 1
- Vanilla essence – 1 1/2 teaspoons
- Baking powder – 1/2 teaspoon – optional
PROCEDURE
Preheat your oven to 350 degrees
MAKE THE OAT FLOUR
Add half of the oats to a blender or food processor and blend into a fine powder. Set aside.
Step 1
In a medium bowl, add the butter and sugar. You can use brown sugar, granulated, or powder sugar.
Step 2
Cream until it is light and fluffy. About 3 to 5 minutes.
Step 3
Add the egg and vanilla essence.
Step 4
Beat well. Scrape side and bottom of the bowl, mix again until combined.
Step 5
Add the oat flour
Step 6
Beat just until it is combined. Do not overmix.
Step 7
Add the oats. You can use quick oats or rolled oats.
Step 8
Fold in, cover, and chill in the freezer for 10 minutes to firm up.
Step 9
Scoop out some dough with a spoon. Roll into little balls.
Step 10
Roll in sugar – ( This is totally optional ) and repeat the process.
Step 11
Arrange on a baking sheet. This recipe makes 15 to 18 cookies

Flatten with the bottom of a cup or a spoon. Bake in the preheated oven for 13 to 16 minutes, until the edges are lightly browned.
Step 13
Remove from oven and let cool completely in the tray on a wire rack.

Enjoy!
Store leftover cookies in an airtight container.
