Simple snail sauce that is finger-licking good. Pair it with rice, yam, potatoes, or simply eat as is with your favourite drink.
INGREDIENTS
- Snail – 500 g
- Hot pepper – to taste
- Onion – 1 medium
- Garlic – 2 cloves
- Ginger – 1/2 a thumb size
- Bayleaf – 1
- Stock cubes – to taste
- Salt – to taste
- Curry powder – 1/2 teaspoon
- Thyme – 1 teaspoon
- Ginger powder – 1/4 teaspoon
- Black pepper – 1/2 teaspoon
- Water – 2 1/2 cups
SAUCE
- Vegetable oil – 3/4 cup
- Red peppers – 5 pieces
- Onion – 2 medium
- Garlic – 4 cloves
- Bayleaf – 1
- Thyme – 1 teaspoon
- Stock cubes – to taste
- Salt – to taste
Step 1
Pour the cleaned snail into a pot on medium heat.
Step 2
Add the finely chopped onion, ginger and garlic.
Step 3
Add the bay leaf, curry powder, ginger powder, thyme, black pepper, and some salt to taste.
Step 4
Add 2 and 1/2 cups water.
Step 5
Cook until tender.
Step 6
Set aside.
Step 7
Blend the pepper, onion and garlic. Set aside.
Step 8
Heat up the oil. When hot, add the onion and fry until translucent.
Step 9
Roughly blend the pepper, onion, and garlic. Pour into the pan and cook for 15 minutes.
Step 10
Add 1 bayleaf, thyme, stock cubes and some salt to taste.
Step 12
Add the cooked snails, turn the heat down to low and simmer for 8 to 10 minutes.
Step 13
Add some sliced onion and green pepper. Cook for 1 minute, take off the heat and serve.
