Stewed beans is an African staple, it is basically beans cooked with pepper, oil, salt, and can be flavoured with ground crayfish if desired. It’s packed with protein and can be eaten at any time of the day.
INGREDIENTS
- 2 cups brown beans
- 2 medium onions
- 1/2 cup palm oil
- 3 – 4 big tatashe, red bell peppers
- 2 -3 atarodo, scotch bonnet
- 1 medium sized green pepper, optional
- Salt to taste
- Seasoning cube to taste
Step 1
Soak the beans in water for a minimum of 1 hour, this is to enable the beans cook faster if you do not have a pressure pot. Rinse, transfer to a pot, add enough water to cook, cover and place over medium high heat.
Step 2
Meanwhile, blend the peppers with half an onion, chop the green pepper and chop the rest of the onions. Set aside.
Step 3
Check the beans for doneness, if ready remove from heat and set aside.
Step 4
Heat up the palm oil in another pot over medium heat. When hot, add the chopped onions and fry for about 1 minute or 2.
Step 5
Add the blended pepper, seasoning cube to taste and fry until oil floats to the top.
Step 6
Add the chopped green pepper and fry for a minute. Add the beans, salt to taste and a little water if necessary.
Step 7
Cover the beans, turn down heat to low and cook for about 10 minutes.
