Jollof Rice is a one-pot dish cooked in a pepper/tomato base. No Nigerian party is complete without Jollof Rice. This recipe right here is a winner, it’s smokey, tasty, and absolutely delicious!

INGREDIENTS

  • 4 cups long grain rice
  • 3 cups reduced pepper mix (tomatoes, tatashe, atarodo and onions)
  • 3/4 cups vegetable oil
  • 4 heaped tablespoons tomato purée
  • 2 cups chicken or beef stock
  • 2 – 3 big bay leaves
  • 1 tablespoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon white pepper
  • Stock cubes to taste
  • Salt to taste
  • 2 big onions, sliced and divided

PROCEDURE

Step 1

Heat up oil in a pot over medium heat, add half of the onions and fry until translucent.

Step 2

Add the tomato puree and fry for 1 minute while stirring constantly so it doesn’t burn. Meanwhile heat up water to wash the rice.

Step 3

Add the pepper mix, salt, stock cubes, thyme, curry powder, bay leaves, a little chicken or beef stock and cook for about 10 minutes stirring every now and again.

Step 4

Pour boiling water over rice, turn with a spatula a few times, drain and wash with cool water until water runs clear. Drain and set aside.

Add the rice.

Step 6

Add some water and beef/chicken broth (Just a little, you must be able to see the rice). Stir and add salt and seasoning cubes to taste. Cover pot with a tight fitting lid and cook on medium high heat until water dries up.

Step 7

Check rice for doneness, add the other half of the onion. Turn with a wooden spoon. Cover pot with aluminum foil, put the lid back on and allow to burn a bit, for that smokey effect. About 8 to 10 minutes.

Step 8

Remove lid and foil, stir rice and leave open for about 2 to 3 minutes to allow some of the steam escape. Take off heat and serve with protein of choice.
