These simple yet delicious vanilla cupcakes are perfectly soft, fluffy, and stay moist for days.
INGREDIENTS
- 1 1/8 cups cake flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 1/3 cup buttermilk
- 1/3 cup vegetable or canola oil
PROCEDURE
Step 1
Preheat your oven to 350 degrees F. Line a 12 cup muffin pan with paper cups. Set aside.
Step 2
Sift together the flour, baking powder, baking soda and salt. Set aside. Whisk the eggs and sugar for about 1 minute.
Step 3
Add the oil and vanilla extract and beat for 30 seconds.
Step 4
Add half of the flour mixture and mix just until incorporated.
Step 5
Add the buttermilk and mix until combined.
Step 6
Add the rest of the flour and mix just until smooth. Do not over mix.
Step 7
Divide batter into paper cups, filling about 1/2 or 3/4 full.
Step 8
Bake in the preheated oven for 12 to 14 minutes or until a skewer inserted comes out clean.
Step 9
Allow to cool in the pan for about 5 minutes on a cooling rack, remove from pan and cool completely.

You’re welcome. You can use peak milk but you’ll need to dilute with water and add a tablespoon of lemon juice or vinegar to it then let it sit for about 10 minutes before using.

Please can the paper cups be reused?
No, it can’t. You can grease your cupcake pans and bake in it directly.
I want to use your recipe but how do I know what your ‘cups’ sizes look like? Is it possible you convert your measurements to kilogrammes or ml for liquids?
I use the standard measuring cups. 1 cup is 250 ml
My cupcake pan tend to burn fast even with the cupcake fillers, am I to grease the cupcake fillers with something or what, I need help with that
No, I would suggest you reduce the temperature of your oven and bake in the middle rack.

You can use yoghurt, but that’s a product of milk too.

You’re welcome. Buttermilk is hard to find in Nigeria. You can use a substitute. Add one tablespoon of lemon juice or vinegar to a 1-cup measuring cup, top it up with milk and let it sit for 10 minutes. Use as needed.
