Got some apples and you do not know what to do with them? Make these delicious apple muffins. They’re tender, well-spiced and so good!
INGREDIENTS
- Apples – 4, small
- Unsalted butter – 1/2 cup
- Eggs – 2
- Vanilla – 2 teaspoons
- Sugar – 3/4 cup
- All-purpose flour – 2 cups
- Milk – 1/2 cup
- Baking powder – 1 & 1/2 teaspoon
- Baking Soda – 1/2 teaspoon
- Salt – 1/2 teaspoon
- Cinnamon – 1 teaspoon
- Nutmeg – 3/4 teaspoon
PROCEDURE
Step 1
PREHEAT YOUR OVEN TO 350 DEGREES F.
Peel, core and finely chop the apples, then transfer into a bowl.
Step 2
Add one tablespoon of sugar, mix to combine, and set aside.
Step 3
Measure out the flour into a dry bowl.
Step 4
Add the baking powder, baking soda, salt, cinnamon powder, and nutmeg. Whisk to combine and set aside.
Step 5
Put the butter in another bowl.
Step 6
Add the sugar. I used half white sugar and half brown sugar. Mix until it’s light and creamy.
Step 7
Add the eggs one at a time and mix until combine.
Step 8
Gradually add the flour in 3 additions.
Step 9
Add the milk in 2 additions, beginning and ending with flour. Mix until it’s just combined, do not over mix.
Step 10
Fold in the apples, leaving some as topping.
Step 11
Divide batter among paper liners filling all the way to the top.
Step 12
Top with chopped apples. Optional – Sprinkle the tops with some cinnamon sugar together with the chopped apples for some added crunch
Bake in the preheated oven for 15 to 20 minutes.
Step 13
Remove from the oven and allow it cool in the pan for 5 minutes before cooling completely.
