Coconut lovers get in here, you have to try this recipe! These cookies are chewy, coconutty, and all-around yummy!

INGREDIENTS
- Unsalted butter – 1/2 cup
- Icing sugar – 2/3 cup
- Egg – 1
- Vanilla essence – 1 teaspoon
- All-purpose flour – 1 & 1/4 cup
- Baking powder – 1/2 teaspoon
- Salt – 1/4 teaspoon
- Desiccated coconut – 1 & 1/3 cups
Plus extra 3/4 cups of desiccated coconut for rolling
PROCEDURE
Step 1
Preheat your oven to 350 degrees F.
To your mixing bowl, add the butter and icing sugar.
Step 2
Mix until it’s smooth and creamy.
Step 3
Add the egg and vanilla essence and mix until it’s smooth.
Step 4
Add the flour, baking powder, and salt.
Step 5
Add the desiccated coconut.
Step 6
Mix until it’s well combined. Do not over mix.
Step 7
Scoop about half a tablespoon of cookie dough into your palm. Shape into a ball and gently flatten in between your palms.
Roll in the desiccated coconut making sure to gently press the coconut in.
Step 8
Transfer to a lined tray and bake in the preheated oven for 12 to 15 minutes.
Step 9
Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a rack to cool completely.
Step 10

Store leftover cookies in an airtight jar.
