This cake is moist, delicious and so easy to make. Can be eaten as is, with a dusting of powdered sugar or choice of frosting.
INGREDIENTS
- 1 3/4 cups all-purpose flour
- 2 to 2 1/4 cups sugar
- 3/4 cups unsweetened cocoa powder plus more for dusting pan
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoon baking soda
- 2 large eggs
- 1 cup hot coffee or hot water
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
PROCEDURE
Step 1
Preheat your oven to 350 degrees F. Grease an 8-inch baking pan with some butter making sure it gets to the corners, put a bit of cocoa powder in the pan, rotate then tap out the excess.
This is to ensure the cake does not stick to the pan. Set aside.
Step 2
Measure out your ingredients.
Step 3
Whisk together the dry ingredients apart from the cocoa powder.
Step 4
In another bowl, mix together the cocoa powder and hot coffee. (You can use hot water but coffee gives the final cake a deeper and richer flavour)
Step 5
Add the milk, vegetable oil, and vanilla extract and give it a good mix. Add the eggs and mix to combine.
Step 6
Pour the wet ingredients over the dry.
Step 7
And mix to combine. Not more than 1 minute.
Step 8
Pour batter into the pan and bake in the preheated oven.
Step 9
Until a skewer inserted comes out clean and cake starts pulling from the sides of the pan, about 50 minutes. Allow it to rest in the pan for 5 minutes.
Step 10
Run a spatula around the sides of the pan to loosen the cake, remove it from the pan and cool completely.
Step 11
Wrap the cake in plastic wrap and chill for some hours or overnight. (It tastes better the next day)
Step 12
Remove cake from the fridge and allow to come to room temperature then serve. Enjoy!

Oil is best for this recipe… You can use half cup of melted butter.
