Spatchcock Chicken Recipe

A flavourful butterflied chicken recipe that requires just a few ingredients. It’s so juicy on the inside and wonderfully crispy on the outside and tastes amazingly good!

INGREDIENTS

  • Chicken -1 whole
  • Salt – to taste
  • Black pepper – 2 teaspoons
  • Ginger powder – 1/2 tablespoon
  • Garlic powder – 1 tablespoon
  • Chicken seasoning – 1 tablespoon
  • Potatoes – 8, halved
  • Carrots – 5 medium, cut into chunks
  • Onion – 1 medium

PROCEDURE

Remove the spine of the chicken by cutting along the spines using a kitchen scissors or a sharp knife.

Turn chicken over and lay it flat. Flatten the breast area with both of your palms. Rinse and pat dry with a paper towel.

Season chicken with some salt, black pepper, garlic powder, ginger powder, and chicken seasoning. Rub it all over the chicken making sure to get under the skin. Cover and marinate for at least 30 minutes.

Preheat your oven to 400 degrees F.

Pour the potatoes, carrot, and onions into your oven tray or baking dish. add 1 tablespoon of oil and season with salt. Toss to combine.

Push the veggies to the side of the pan and place chicken in the middle. You can also place the chicken on top of the veggies.

Place in the preheated oven and bake for 50 minutes, then broil for 10 minutes. If your oven doesn’t have a broiler, bake for 1 hour.

Remove the chicken from the oven and let it rest for 10 minutes before serving. This is to allow the juices redistribute.
