These rolls are super soft, tender, and delicious, you can’t actually taste the potatoes but it adds an extra fluffiness and colour to it. Can be eaten as is or with a spread or side of choice.
INGREDIENTS
- 4 ¼ – 4 ½ cups all-purpose flour plus more for shaping
- 7 tablespoons sugar
- 1 cup mashed sweet potatoes
- 1/4 cup melted butter or oil
- 2 teaspoons salt
- 1 tablespoon yeast
- 1 egg
- 1 cup warm water from boiling potatoes
PROCEDURE
Step 1
Add 1/4 cup of the potato water into the bowl of your mixer, add the yeast, 1 teaspoon of sugar and leave until frothy. About 5 to 10 minutes.
Step 2
Add the sugar, egg, mashed potatoes, melted butter or oil, and the rest of the water and mix to combine.
Step 3
Add the flour and salt and knead on medium speed until smooth.
Step 4
About 7 to 8 minutes.
Step 5
Oil the inside of a big bowl, knead the dough by hand for about 30 seconds and shape into a ball. Transfer dough into the oiled bowl turning to coat all surfaces, cover with cling film, and kitchen napkin.
Place in a warm spot until double or more than doubled in size.
Step 6
About 1 hour 30 minutes.
Step 7
Grease a baking dish or 2 pans with butter. Deflate the dough and cut into 14 – 16 equal pieces.
Step 8
Shape dough into balls and arrange in the buttered pans seam side down, cover with cling film, and place in a warm spot until doubled in size.
Step 9
About 1 hour. (10 to 15 minutes towards the end of the rising period, preheat your oven to 350 degrees F)
Step 10
Uncover the rolls and bake in the preheated oven for 20 to 22 minutes. Remove from pan, allow to cool, and enjoy.
