Breakfast Egg Muffins

These hearty egg cups are so delicious and can be altered to your taste. Add in some spinach, chopped sausages, bacon, tomatoes, or whatever you want. It’s quick, easy, and filling.

INGREDIENTS

  • Eggs – 5 large
  • Mixed bell peppers – 1/2 cup, chopped
  • Onion – 1/4 cup
  • Garlic – 2 cloves, minced
  • Salt – to taste
  • Chilli pepper – to taste, optional,
  • Cheese – 1/3 to 1/2 cup, mozzarella or cheddar
  • Black pepper – 1/2 teaspoon

PROCEDURE

Step 1

Break 5 eggs into a bowl.

Step 2

Add the chopped mixed bell peppers.

Step 3

Add the chopped onion and minced garlic.

Step 4

Add some salt and chilli pepper to taste.

Step 5

Throw in some grated cheese and black pepper. Optionally, add a splash of milk.

Step 6

Whisk well to combine.

Step 7

Spray some ramekins or cupcake tray with cooking spray or grease with butter or oil, and pour in the egg mixture.

Step 8

Top with extra cheese and/or spinach, chopped sausages, bacon, tomatoes, or whatever you like.

Bake in the preheated oven for 20 to 25 minutes, or until set.

Step 9

Remove from oven and serve.
