Nigerian pancake is a sweet and savoury pancake made by adding chopped and/or dried pepper and onions to a basic pancake batter.
INGREDIENTS
- 3 cups all purpose flour
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon chopped and/or dried pepper
- 1/4 teaspoon grated nutmeg
- 2 3/4 cups milk
- 2 large eggs
- 1/4 cup chopped onions, optional
- Oil for coating pan
PROCEDURE
Step 1
Measure out your ingredients.
Step 2
Whisk together the dry ingredients and create a well. Add the milk and eggs and mix until smooth.
Cover and refrigerate batter for 30 minutes or more.
Step 3
Heat up a pan over medium heat and coat with oil. Add the onions to the batter and mix to combine (I added to only half of the batter).
Using a ladle, scoop batter into the heated pan, swirl to coat the entire bottom of the pan and cook for about 1 to 2 minutes.
Step 4
When the top seems dry and the edges start to curl, flip and cook for about 1 minute.
Take out the pancake and repeat process till batter is used up.
