Beans and corn mix stewed in a tasty pepper sauce. It’s so satisfying, comforting, and a wonderful way to make and enjoy beans.
INGREDIENTS
- Honey beans – 2 cups
- Water – 4 cups
- Palm oil – 1 & 1/2 cooking spoons
- Onion – 1 medium
- Bell pepper & hot pepper – 1 cup, coarsely blended
- Salt – to taste
- Green pepper – 1
- Sweet corn – 1 & 1/2 cups
PROCEDURE
Rinse the beans, add enough water to cover, and bring to a boil.
Drain the beans, add 4 cups of water and cook until it’s soft.
Heat up the palm oil in another pan on medium heat. Add the onion and fry until it’s softened.
Add the coarsely blended pepper and fry for 15 minutes. You can add in some crayfish if you desire.
Season and add the green pepper. Fry for 1 minute and take it off the heat. Set aside.
Now, add the sweetcorn to the tender beans, season with salt and cook for 2 minutes.
Pour the pepper sauce into the beans and mix to combine. Turn the heat down to low and simmer for 10 minutes.
Turn off the heat and serve.
