A quick, tasty, and hearty stew recipe that is so finger-licking good. Serve it over pasta or noodles. Yum!
INGREDIENTS
- Cooking oil – 2 tablespoons
- Onion – 1 large
- Garlic – 1 tablespoon, minced
- Carrot – 1 to 2 large
- Minced meat – 700g
- Tomato paste – 2 heaping tablespoons
- Beef broth – 1 to 1 1/2 cups
- Canned tomato – 1
- Salt – to taste
- Basil – 1 tablespoon
- Oregano – 1 tablespoon
- Black pepper – 1/2 teaspoon
- Bay leaves – 2
- Chilli pepper – to taste
PROCEDURE
Heat up the oil over medium heat. Add the onion and dry until softened.
Add the garlic and carrot and fry for about a minute.
Add the minced beef. Fry until it loses it pinkness and break up any clumps.
Add the tomato paste, mix it in and fry for 1 minute.
Add the basil, oregano, black pepper, some salt to taste, bay leaves and chilli pepper. Fry for about a minute or two.
Add the beef broth and continue cooking for about 2 minutes. Now add the canned tomato. You can also add tomato sauce if you wish. Break up the tomatoes as it cooks.
Turn the heat down to low and simmer for 30 minutes, making sure to stir from time to time.
Turn off the heat and serve.
