A simple yellow rice recipe with a twist. It’s flavourful and deliciously good. Pair it with your favourite protein, and you have an awesome meal.
INGREDIENTS
- Cooking oil – 3 tablespoons
- Bay leaves – 2
- Black pepper – 1 teaspoon
- Cinnamon – 1 stick
- Onion – 1 large, sliced
- Garlic – 1 tablespoon, finely chopped
- Ginger – 1 Tablespoon, thinly sliced
- Chilli pepper – to taste
- Thyme – 1 teaspoon
- White pepper – 1 teaspoon
- Turmeric – 1 & 1/2 teaspoon
- Basmati rice – 2 cups, uncooked
- Chicken broth/stock – 2 cups
- Water – 1 cup
- Salt – to taste
- Butter – 1 tablespoon
PROCEDURE
Step 1
Heat up the oil over medium heat.
Step 2
Add the bay leaves, black peppercorns and cinnamon. Fry until fragrant. About 1 to 2 minutes.
If you don’t have whole black pepper, add it after the onion so it doesn’t burn.
Step 3
Add the onion and fry until softened.
Step 4
Add the garlic and ginger. Fry for about a minute.
Step 5
Add the chilli pepper. The quantity you use depends on your heat tolerance. Stir it in and fry for about 1 minute.
Step 6
Add the thyme, white pepper and turmeric. Fry for a minute or two.
Step 7
Add the rice and mix to combine. You can use any kind of white rice you like.
Step 8
Add the chicken broth and water. You can use only chicken broth. I only had 2 cups on hand.
The quantity of broth/water needed depends on the type of rice you use. You may need more or less.
Step 9
Add some salt to taste, cover and cook on low heat until cooked.
Step 11
Mix in 1 tablespoon of butter. Cover and cook for 1 minute.
Step 12
Fluff rice and serve.

No, it would change the colour of the rice.
