It is that time of the year when we look out for interesting meals to make for our family and special friends when they visit. Just follow this easy-to-make, ready in no time easy fried rice, and you’d be glad you did. It is amazingly delicious and your family and friends would adore you for this.
INGREDIENTS
- Basmati rice – 2 & 1/2 cups
- Boneless chicken – 2 pieces
- Salt – 1 teaspoon
- Soy sauce – 1 teaspoon
- Eggs – 3
- Peppercorn – to taste
- Spring onion – 1/2 cup
- Green peas – 1/2 cup
- Onion – 1 large, chopped
- Garlic – 4 cloves, finely chopped
- Carrots – 3/4 cup
- Chilli pepper – to taste
- Black pepper – to taste
- Cooking oil – 4 to 5 tablespoons
- Dark soy sauce – 1 & 1/2 tablespoons
- Sesame oil – 2 teaspoons
NOTE
First, cook the basmati rice a day before and transfer to the fridge to cool. It’s best to use day-old cold rice.
PROCEDURE
Step 1
Cut the chicken into cubes and transfer into a bowl.
Step 2
Add one teaspoon of salt.
Step 3
And one teaspoon of dark soy sauce.
Step 4
Mix well to combine the set aside for 10 minutes.
Step 5
Heat up 1 tablespoon of oil. Add the eggs and season with some salt and pepper to taste.
Step 6
Fry then transfer into a bowl.
Step 7
Add about 3 tablespoons of oil into the pan on medium-high heat, when hot, add the chicken.
Step 8
Fry until chicken is cooked through. About 3 to 4 minutes.
Step 9
Add the onion and finely chopped garlic. Fry until the onion softens a bit.
Step 10
Add some pepper to taste and mix it in.
Step 11
Add the chopped carrots.
Step 12
Fry for about 2 minutes.
Step 13
Add the rice and fry until it’s hot.
Step 14
Add the soy sauce and sesame oil. You can use more or less soy sauce.
Step 15
Add the spring/green onion.
Step 16
Add the eggs and peas, and fry for about a minute.
Step 17
Take it off the heat and serve.
