This tasty pineapple coconut smoothie can be enjoyed at any time of the day. It’s thick, creamy, and delicious.
INGREDIENTS
- Pineapple – 1 whole
- Sugar – 2 to 3 tablespoons, optional
- Shredded coconut – 2 to 3 tablespoons
- Coconut milk – 2 cups
PROCEDURE
Step 1
Peel the pineapple and remove the brown eyes.
Step 2
Cut it up. Transfer into a bowl or ziplock and freeze for at least an hour.
Step 3
Throw the pineapple into a blender.
Step 4
Add the grated coconut.
Step 5
Add the sugar. You can use more or less. The quantity you use depends on how sweet you want it, and you could leave it out entirely.
Step 6
Add the coconut milk, cover and blend. Be sure to chill the milk ahead of time. The colder the better. Bl
Step 7
Pour about two tablespoons of coconut milk into a plate, and two tablespoons of shredded coconut into another.
Dip the rim of each glass into the coconut milk.
Step 8
Roll it in the shredded coconut.
Step 9
Fill the glasses and serve.
