Coconut puff puff is a deep-fried batter that is insanely delicious! It is pillowy soft on the inside, coconutty, and has the right amount of sweetness.

INGREDIENTS

  • Plain flour – 3 cups
  • Coconut powder – 1/2 cup
  • Yeast – 1 tablespoon
  • Sugar – 1/2 cup
  • Salt – 1/4 teaspoon
  • Nutmeg – 1/2 teaspoon
  • Lukewarm water – 1 cup
  • Coconut milk – 1 cup
  • Oil for deep frying
  • Extra Coconut powder – for dusting (about 2 tablespoons)

PROCEDURE

In a mixing bowl, add the plain flour, coconut powder, yeast, sugar, salt, nutmeg, and mix to combine.

Add the lukewarm water and coconut milk and mix until it’s well combined.

Cover with a kitchen napkin and place in a warm spot until it doubles in size. About 40 minutes.

Deflate the batter and mix to combine. Cover once again and allow it to rise for 20 minutes.

Meanwhile, heat up some oil on medium heat for deep frying.

Drop small amounts of the batter, about a tablespoonful into the hot oil. You can use a rounded spoon or drop from your palm.

Move them around and fry until it’s golden brown. Take them out from the oil and transfer onto a kitchen paper-lined tray.

Repeat the process until batter is finished.

Serve with a dusting of coconut powder or powdered sugar.

Important note: You can use coconut flour for this recipe, you’ll only need to add more water and coconut milk as coconut absorbs liquid.
