INGREDIENTS
- 4 cups all-purpose flour plus more for rolling
- 1/4 cup warm water
- 3/4 cups milk
- 1/4 cup butter, melted and cooled
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 teaspoon grated nutmeg
- 2 1/2 teaspoon instant yeast
- 2 eggs
- 4 cups oil for frying
PROCEDURE
Step 1
Pour the water into a small bowl, sprinkle in the yeast and a teaspoon of sugar, mix and let it sit until foamy.
Step 2
About 5 to 10 minutes.
Step 3
Add the flour, salt, the rest of the sugar, and nutmeg into the bowl of your mixer.
Step 4
Beat in the eggs, melted butter, milk, and yeast mixture.
Step 5
Knead on medium speed until smooth and stretchy. About 10 minutes. (This process can also be done by hand).
Step 6
Remove dough from bowl and knead for about 1 minute by hand and shape into a ball.
Step 7
Oil the inside of a big bowl, transfer the dough to the bowl and coat the top with oil, cover with plastic wrap and/or kitchen towel, and allow to rise in a warm spot until doubled in size.
Step 8
1hour later.
Step 9
Sprinkle a bit of flour on your work surface and rolling pin. Turn out the dough and roll out into 1/2 an inch thickness and cut with a doughnut cutter or two circular big and small cutters.
Step 10
Gently transfer doughnuts to a lightly floured tray about 2 inches apart, cover loosely with a plastic wrap and leave in a warm spot until doubled in size. (gently knead together the leftover dough and doughnut holes, allow to rest for 5 minutes, roll out and repeat the process).
Step 11
30 minutes later.
Step 12
Heat up oil in a bottomed pan over medium heat and line 2 trays with paper towels. Carefully lift doughnuts into the hot oil and fry for 1 minute or until golden brown.
Step 13
Flip and fry for 45 seconds or until golden.
Step 14
Transfer doughnuts to the lined tray, flip doughnuts after 45 second and place on the second tray so it soaks up excess oil on both sides.
Step 15
Serve.

Yes you can.

Can I replace butter with vegetable oil
Yes, you can but butter or margarine is best for this recipe.
Sis,pls which cup used for measurement here ma?
I used standard measuring cups.
It is my problem ,we do not use them in Czech Republik. Have to order them, now it means a training in maths and will be most probably not exact, because I only suppose one cup means cca 240 ml. But I have tried and now wait for result. We bake here something very similar also in oil – koblihy. It has no ring and topping, but a jam injected inside.
Thanks for this recipe. I followed the procedure and it came out well. I would have loved to share the pictures with you. May God bless you
You’re welcome. I’m glad it came out well. 🙂

Awesome job as always. I have a question about the milk. Is is evaporated milk or fresh milk?
Thank you very much. It’s UHT milk. You can use evaporated milk or fresh milk. Be sure to dilute the evaporated milk.
