Simple and flavourful chicken stew that is finger-licking good and so simple to make.
INGREDIENTS
- Tomatoes – 12 small pieces
- Red & Green pepper – 8 to 9 pieces
- Onion – 2
- Hot pepper – to taste
- Garlic – 5 to 6 cloves
- Salt – to taste
- Vegetable oil – 1/2 cup
- Chicken pieces – 2 kgs
- Thyme – 1/2 tablespoon
- Chicken seasoning – to taste
PROCEDURE
Cut the tomatoes into quarters, cut the peppers and onion and transfer into a baking pan or baking dish together with the garlic.
Add some salt to taste and 2 tablespoons of vegetable oil. Toss everything together and roast in a preheated 350° F oven for about 40 minutes.
Clean the chicken and pat dry. Season with salt and some chicken seasoning, mix to combine, cover and marinate for at least 30 minutes.
Remove the pepper/tomatoes from the oven, transfer into a blender and blend until smooth. Set aside.
Heat up the vegetable oil in a pot on medium heat. Add the chicken in batches and brown on all sides.
Return the browned chicken into the pot. (You can take some oil out).
Pour the blended tomatoes into the pot. Add 1/2 a tablespoon of thyme and mix to combine.
Turn the heat down to low and cook until chicken is tender and stew thickens. Stir from time to time so it doesn’t burn.
Taste and adjust seasoning if needed.
