One-Pot Beef Jollof Rice, Recipes by Dolapo Grey

A fantastic one-pot beef jollof rice recipe that smells and tastes amazingly good. The beef is tender and so flavourful and the rice is soft with no sticky grain. You’ll be making this recipe again and again, it’s that good!

INGREDIENTS

  • Beef – 1/2 kg, You can use more
  • Vegetable oil – 3/4 cup
  • Onion – 2, sliced
  • Tomato paste – 4 tablespoons
  • Bay leaves – 3
  • Tomato/pepper mix – 4 cups, roasted/cooked
  • Salt – to taste
  • Stock powder – to taste
  • Thyme – 1 tablespoon
  • Rice (short grain) – 4 cups
  • Water

PROCEDURE

Rinse and pat dry the beef, season with salt and set aside.

Heat up the vegetable oil in a pot over medium heat. Add the meat and brown on both sides. This could take a while, do not rush the process.

Add the sliced onions and fry until its translucent.

Add the tomato paste and stir to combine. Add the bay leaves, fry for 2 to 3 minutes.

Add some stock powder, 1 tablespoon of thyme and continue frying for another minute.

Add the pepper mix and fry fro 15 minutes.

Wash the rice until the water runs clear. You can use warm or hot water for the first wash. Do not parboil.

Drain and add the rice to the pot. Season with some salt and stock powder, add a little bit of water and mix well. The water should just be half an inch or one inch above the rice. Do not be tempted to add more water.

Stir and seal the pot with aluminium foil, this is to lock in the steam. Put the lid on and turn the heat down to your lowest setting. You want the rice to cook slowly. Cook until the rice is cooked and the water is dry.

Stir the rice and add a few slices of onions and green pepper. Cover and cook for 1 minute.

Turn off the heat and leave the pot open for about 10 minutes before covering. This is to let the steam escape.

Serve.
