Fish roll is a beloved Nigerian snack that’s flaky on the outside, soft on the inside, and packed with a flavourful fish filling. INGREDIENTS NEEDED
- Oil
- Onion
- Garlic and pepper
- Curry and thyme
- Flaked fish
- Spring onion
- All purpose flour
- Baking powder
- Salt
- Sugar
- Nutmeg
- Butter
- Egg
- Water
DIRECTIONS
Heat up 3 tablespoons of oil in a pan, add the onion, and fry until its translucent, afterwards add the pepper and garlic, and let it fry for about a minute. Add curry powder, thyme and some salt to taste

Add the flaked fish to the pan. You can use any type of fish you prefer. Add some salt to taste, and stir-fry it for about two minutes. Then, add the spring onion, mix it in, and take the pan off the heat.
Leave it until it’s cool

For the dough
Add all the dry ingredients into a bowl, and mix to combine

Add the butter. Using the tips of your fingers, rub the butter into the flour mixture until the consistency resembles large breadcrumbs

Afterwards, add the egg, and mix it in until it is well combined

Add the water, and gently form the mixture into a dough

Cover the bowl, and let it rest for 15 minutes

Remove the dough from the bowl, and transfer it unto a floured work surface. knead for approximately 1 minute, then portion the dough into 10 to 12 pieces

When working with the dough, roll out one ball at a time into an oblong shape, then add about 1 tablespoon of the filling.

Roll it up tightly, and brush the end with some water to ensure it seals properly and the filling stays secure during frying

Repeat the process for the remaining dough balls, then heat up some oil for deep frying

Fry until golden. You will want to fry in two batches to avoid overcrowding the pan
